Rename mir_proving_server -> mir_demo_shell

I feel this is the lesser evil, and less confusing, despite the
fact it reintroduces the word "shell".

When an Ubuntu (or other) user installs mir-demos, they should be able
to type: mir_demo_<tab> and see all the available demos.
