Handle long device names correctly

Instead of copying device names using strncpy (incorrectly), simply
keep a pointer to the correct device name. Thanks to Ralf Jung

Drop CRTSCTS for ELO touchscreens in 10-byte mode

According to an actual user of the screen, communicating with the
device requires removing the CRTSCTS option.

For now I'm only removing the flag in 10-byte mode.
