tests: use file based markers in snap-service-stop-mode (#5530)

The jounalctl output based testing is not reliable on core18
systems. It is not fully clear why. Setting the python output
to unbuffered (python3 -u) did not help.

This change switches to file based markers which seems to make the test reliable again.
