docs: replace syslog with journal

Syslog will not be a part a default part of Ubuntu Core soon. This
commit replaces it with the journal so that there is no confusion
about which log files shall be provided in a bug report.

snap: disallow running as non root

This commit wraps the bluetoothctl and obexctl in a script
that makes it not possible to execute as non-root user.

This is to reduce the confusion of users who executed these programs
as regular users which is not supported on Core
