data/gschema: Make opus the default format

The last change was from vorbis to flac in 8e5f8d73, unfortunately
without noting any reasoning. Arguably opus is a more reasonable
default - compressed, with a modern format. Additionally, there are
several known cases where using opus provides much better audio quality
due to driver issues with flac.
