Re-enable go tests on snap build

test: set SNAP_DATA in TestChangeConfiguration

This is needed when executing the tests on snap creation, as SNAP_DATA
can be set to a read-only folder when using snapcraft shipped as a snap.

tests: remove buggy test

This check fails because output of "snap list" changes continuously, so
you cannot rely on it. Also, the check is redundant.
