pbuilder calls debootstrap to create chroots, debootstrap will unpack and configure base Debian packages; I suspect debootstrap is failing due to a bug in some Debian package in sid. For instance this could be due to http://bugs.debian.org/cgi-bin/bugreport.cgi?bug=581420.

Try running "sudo debootstrap sid rootfs", you should see the actual failure in rootfs/debootstrap.log.

Please report bugs related to debootstrap failing against Debian, there's nothing we can fix on the Ubuntu side of things to make Debian debootstrapable.
