Yes, ~ is on NFS (Along with the rest of root...)
twigathy@corona:~$ sudo apparmor_parser -R /etc/apparmor.d/usr.bin.evince Removal succeeded for "/usr/bin/evince". Removal succeeded for "/usr/bin/evince-previewer". Removal succeeded for "/usr/bin/evince-thumbnailer".
^ After doing this, I can open evince just fine! I guess I've hit a pretty obscure and weird bug then :-)
