dmesg output would also be interesting.

I think perhaps that you haven't re-built the initramfs for your kernel,
and as nouveau starts early it's looking for the firmware there, not
finding it, and not looking for it again.

Could you attach dmesg to this bug, and then try again after running
“sudo update-initramfs -u” and rebooting?
