Thank you for using Ubuntu and filing a bug. Can you add the following to /etc/apparmor.d/local/usr.bin.evince:
/usr/bin/exo-open ixr,

Then do:
sudo apparmor_parser -r /etc/apparmor.d/usr.bin.evince

and report back if this fixes the issue for you?
