Using mkusb-dus / usb-pack-efi to prepare the live usb, I was able to boot the "Persistant Live" of Ubuntu MATE Groovy Desktop 20.10 Oct 14, 2020 ISO.
Though the system booted fine, and I got to see the desktop screen, I have not actually installed the OS yet as I need to free up a partition for that.
