I installed Gnome to try to recreate this and I found that I could only recreate it when I had the display scale set to 200%. If you set it to 100%, KiCad works as expected. Note that this is _monitor_ dependent, so it will only affect the monitor selected and if you have multiple monitors (or a laptop with external display), you'll need to configure them separately.

Now, at 100%, the fonts are small (as you've noted). You can change this by going into "Universal Access" and choosing "Large Text" on.
